Ingredients


  • 650g beets cooked, peeled, sliced
  • 1 Tsp olive oil
  • 1 Tsp honey
  • 150g salad or baby spinach
  • 3 mandarin oranges peeled and segmented
  • 1 red onion sliced
  • 45 g pine nuts toasted
  • 120g feta cheese crumbled
  • 80 ml extra virgin olive oil
  • 3 Tsp Dijon mustard
  • 2 Tsp honey
  • 2 Tsp freshly squeezed lemon juice

Instructions


In a small bowl, mix together sliced cooked beets together with olive oil and honey.

Mix all the salad dressing ingredients in a mason jar and mix well.

Arrange all the ingredients.

Add the dressing and serve. Enjoy.
