Green bean salad with feta and wholemeal bread

Ingredients


  • 40 g sliced almonds
  • 1 red onion
  • finely chopped parsley
  • zest of one untreated lemon
  • 20ml lemon juice
  • 200g Greek yoghurt (10% fat)
  • 20g olive oil
  • Salt and pepper
  • 450g green beans
  • 200g feta cheese
  • 2 slices of wholemeal bread per person

Instructions


Finely chop the red onion and parsley.

Add the lemon zest, lemon juice, yoghurt, oil, salt and pepper and mix together.

Cook the beans in water or steam until al dente.

Crumble the feta.

Sprinkle the almond slices, feta and dressing over the beans and serve with wholemeal bread.
