Leave the spinach to defrost a little.
Heat the oil in a pan and sauté the shallots and garlic. Then add the spinach and cook for 10 minutes.
Preheat the oven to 180 degrees!
Add the parmesan, seasoned salt, garlic pepper, nutmeg and sour cream to the spinach.
Pour into 2 ramekins.
Make 2 wells in each and break 2 eggs into each.
Then add 5 balls of mozzarella to each and salt the eggs a little.
Bake in the oven for about 10 minutes.
