Ingredients


  • 4 medium sweet potatoes (480g), peeled cut into slices
  • 1 can corn, rinsed and drained (250g)
  • 1 can black beans, rinsed and drained (250g)
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 2 green onions, chopped
  • Cilantro, chopped
  • 2 avocados, pit and skin removed, chopped
  • Juice of 2 limes
  • 1 tablespoon rapeseed oil
  • Salt and pepper

Instructions


Step 1
Pre-heat the oven (grill). Toss the cut sweet potatoes in rapeseedoil, salt, and pepper. Grill them over medium-high heat until they can easily be pierced with a fork.

Step 2
In a bowl, combine the corn, black beans, red and yellow pepper, green onions, cilantro, and avocados.

Step 3
Once the sweet potatoes are cooked through, cut them into smaller pieces and add them to the bowl.

Step 4
Add the lime juice, salt, and pepper. Toss to combine. Taste and re-season, if necessary.
