Ingredients


  • 150g green lentils
  • 10g vegetable stock
  • 1 oranges (280g)
  • fennel (as much as you like)
  • 1 carrot (100g)
  • 1 red pepper (150g)
  • 1 apple (120g)
  • 1 stalk of celery (60g)
  • 80g goat cheese
  • 10g shallots
  • 2 Tsp olive oil
  • salt and pepper
  • fresh parsley
  • fresh coriander

Tips


The vitamin C of the oranges and the fennel help to better absorb the iron of the lentils.

Instructions


Cook lentils in 1 litre of water  plus the vegetable stock according to the packageinformation.

Thread the oranges and cut them into pieces.

Wash, peel the apple and cut it into small pieces.

Cut celery, pepper, carrot and fennel into small pieces.

Cut goat cheese into small cubes.

Mix all ingredients and season.
