  • 3 eggs
  • 80 ml honey/maple syrup or date syrup
  • 60 ml mild olive oil or rapeseed (canola) oil
  • 100 g ground almonds
  • 60 g flour or oat flour or rice flour
  • 40 g unsweetened cocoa powder
  • 1 tsp baking powder
  • Pinch of salt
  • Optional: 1 tsp vanilla

• Preheat oven to 170 °C (convection)
• Mash or puree the avocado
• Mix all ingredients together in a bowl
• Pour batter into a parchment-lined pan
