You can serve it either with rice or with Naan bread.
Slice all the vegetables and sweet potato.
Warm a large skillet and add the oil. Add the onion and when they softened, add the eggplant.
Let it bake for 5 minutes before adding the zucchini, tomatoes and sweet potato.
Add the coconut milk and eventually a little bit of vegetable broth if you need more liquid.
Simmer and add the paneer.
Salt and pepper and add fresh coriander before serving.
