Ingredients


  • 300g plain flour
  • 200g ground almonds
  • 3 tsp baking powder
  • 250ml almond milk
  • 200ml maple syrup
  • 4 Tsp coconut oil (melted)
  • 100g frozen raspberries
  • 100g dark chocolate chips
  • 1 tsp of vanilla powder

You can use gluten free flour.

Instructions


Preheat the oven at 180°C. Line the muffin trays with muffin cases.

Place the flour, ground almonds, baking powder and vanilla powder into a large bowl and mix well until there are no lumps.

Pour in almond milk, maple syrup and melted coconut oil. Mix well until a thick batter forms.

Once thick and smooth, stir in the raspberries and chocolate chips.

divide into 16 equal portions and bake 25-30 minutes until golden and cooked through.
