Ingredients


  • 4 apples
  • 3 Tbsp lemon juice
  • 1,5 tsp cinnamon
  • 3 Tbsp sugar
  • 50g sugar
  • 4 eggs (M)
  • 1 pinch of salt
  • 125 g flour
  • 1 tsp baking powder

Instructions


Wash 3 of the apples, peel, quarter, core and cut into wedges.

Mix with 1 Tbsp lemon juice, 1 tsp cinnamon and 2 Tbsp sugar.

Line the base and sides of a greased loaf tin (25 cm long) with apple slices and sprinkle with breadcrumbs.

Separate the eggs. Beat the egg whites and salt until stiff, add 50 g of sugar and beat until dissolved.

Stir in the egg yolks briefly. Mix the flour and baking powder and fold in.

Spread half of the batter into the tin and smooth out, top with the remaining apple slices and press down.

Bake in a hot oven (electric oven: 180 °C, fan oven 160 °C, gas mark 2) for approx. 35 minutes.

Leave the cake to cool in the tin for approx. 10 minutes, then turn out onto a cake rack.

After 5 minutes, remove the tin and leave the cake to cool.

Wash the remaining apple, peel, quarter, core and cut into wedges. Heat 2 Tbsp lemon juice and 3 Tbsp water.

Add the apple slices and 1 Tbsp sugar, sprinkle with 1/2 tsp cinnamon and steam for 2-3 minutes.

Leave to cool.
